My Favorite Driving Songs!

Cowgirl Casserole

This is a lightened version of a casserole I used to have as a kid. That's not to say that this version is full on "healthy" per se, but sometimes you need comfort food, and this does the job without feeling like you're going to die after you eat it. 

1 lb. any small pasta (I've made it with macaroni, all the way up to rigatoni, and each gives a slightly different taste experience)
1 lb ground turkey or boneless skinless chicken breasts cut into 1/2" cubes
1 lb cubed ham
1-2 small yellow onions
1 8oz can tomato sauce
8oz shredded cheese (medium cheddar or casserole mix is good, sharp cheddar can be too strong a flavor)

Preheat oven to 400°. Bring a large pot of water to a boil, prepare pasta according to directions, draining when pasta is still al dente, set aside. Dice onions. Brown turkey in pan with onions, and add ham at the end (if fully cooked) otherwise, cook together with turkey and onions. Add pasta to your favorite casserole dish, and mix with meat and onion mixture. Pour in tomato sauce and stir. Add half your cheese, and stir again. Top with remaining cheese. Bake for 30 minutes, or until top is slightly browned, bubbly in the middle and crispy at the edges. Remove from oven and let cool 10 minutes. Serve with your favorite salad or vegetable.
